Ingredients:
2 cups raw spinach
2 cups fresh rocket
5 cherry tomatoes, halved
¼ red capsicum, small cubed
¼ cucumber, small cubed
½ can chickpeas, drained and rinsed
10 green olives, halved
¼ block cheddar cheese, small cubed
½ tbsp extra virgin olive oil
½ tbsp thick aged balsamic vinegar
Salt & pepper
Method:
Place spinach and rocket in a large bowl or on a serving plate.
Top with remaining ingredients and dress with olive oil, balsamic vinegar, salt & pepper.
